Shawarma is a type of Middle Eastern street food that is made from chicken, lamb, turkey, or beef. Traditionally, thin slices of marinated meat are stacked on a vertical rotisserie. The meat cooks slowly over several hours while slowly rotating. The meat’s cooked surface is shaved off and served. Since the majority of us don’t have a vertical rotisserie at home, we’ll show you how to make delicious chicken shawarma in your home kitchen!

You can cook chicken in a pan, bake it, or in an air fryer. Please keep in mind that the temperature of an air fryer can vary depending on the make and model. I recommend starting with less time, checking for doneness, and then increasing the time as needed.

Ingredients
  

Prepare Marinade

  • 2 Teaspoon Kashmiri red chilli powder Note:1 If you like less spicy use paprika.
  • 1 Teaspoon Onion powder optional
  • 1/2 Teaspoon turmeric powder
  • 1 Teaspoon cumin powder
  • 1 Teaspoon black pepper powder
  • 1 Teaspoon garlic powder
  • 1/2 Teaspoon cinnamon powder
  • 1 Teaspoon Coriander powder
  • 1/2 Teaspoon red chilli flakes
  • 1/2 cup Yogurt
  • 1/2 Teaspoon salt or to taste
  • 1 Tablespoon lemon juice
  • 1 Tablespoon olive oil

Cook Chicken

  • 6 boneless skinless Chicken Thighs (about 2 lbs) or 2-3 Chicken Breasts cut into thin slices.

For the shawarma Sauce

  • 1/2 cup mayonnaise
  • 4 garlic cloves
  • 1 Tablespoon vinegar
  • 1 Tablespoon lemon juice
  • 1 tbsp Tahini or 2 Tablespoon sesame seeds White
  • 1/4 tsp salt
  • 1/4 tsp black pepper powder
  • 1/4 tsp oregano
  • 2 Tablespoon olive oil

Saute Bell Pepper & Onion

  • 1 cup bell peppers
  • 1/2 cup onion Slices

Prepare the Wrap

  • Tortilla
  • pickled cucumber
  • lettuce
  • chill garlic sauce
  • butter as required

Instructions
 

Prepare Chicken Thigh Or Chicken Breast

  • You can use boneless skinless chicken thigh or chicken breast for this recipe. If you are using chicken thigh then use it as it is. If you're using chicken breast then use a sharp knife to carefully slice the chicken breast horizontally into even slices
  • In a large bowl add all ingredients for the marinade and whisk all together to combine. Add the chicken in to the marinade and toss well to coat. Cover and store in the fridge for at least 2 hours up to 12 hours.

  • Stovetop: When ready to cook place a large pan over medium-high heat. Add 2 Tablespoons of olive oil to the pan. Add chicken slices and saute both sides until it is brown, crisp at the edges, and cooked through very well.
    Or
    Air Fryer: Cook in the air fryer until chicken pieces are brown and cooked through very well, 20-25 minutes at 380°c. Follow the instruction for your air fryer. An instant-read thermometer inserted into the center should read at least 165 degrees F (74 degrees C).
  • Remove from the pan and let it rest for 2-3 minutes, then slice in to long strips.

Prepare Bell Pepper & Onion

  • Heat a pan and add 1 tbsp olive oil, then add sliced bell peppers, and Onion. Cook until soft to your preference.

For the Mayonnaise Sauce

  • Add all ingredients for the Shawarma sauce in to a blender and grind this to paste.

Make Chicken Shawarma Wrap

  • Take a tortilla, add a thin layer of chili garlic sauce, then add enough shawarma sauce, and spread it out. Layer cooked bell pepper and onion, lettuce, and pickle. Then add chicken strips and top with more shawarma sauce. Roll it in to wrap.
  • Heat a grill or pan and grease with butter. Grill each side of the shawarma for 2-3 minutes and serve it warm.

Notes

  1. If you like spicy you can use red chili powder. Adjust the quantity to your spice level. 
  2. You can use any of your favorite vegetables for the filling.
