Ingredients
  

  • 1/2 medium-sized cabbage shredded
  • 1/2 cup freshly grated coconut
  • 1/4 teaspoon turmeric powder
  • 6 shallots finely chopped
  • 2-3 garlic cloves

  • 1 teaspoon Mustard Seeds
  • 1/2 teaspoon cumin seeds
  • 1 teaspoon Urad Dal
  • 2-3 green chilies slit
  • 2 Dry Red Chilly
  • 2 sprigs Curry leaves
  • 1/4 teaspoon Black pepper
  • 1/2 tablespoons Ginger, finely chopped

Instructions
 

  • Combine the grated cabbage, salt, grated coconut, turmeric powder, finely chopped shallots, finely chopped ginger, green chilies and finely chopped garlic.
  • Heat coconut oil in a pan over medium heat.
  • Add mustard seeds and let them crackle. Add urad dal, cumin seeds and dry red chilies to the pan. Sauté until the urad dal turns golden.
  • Add cabbage and mix all together. Let the cabbage cook over medium high heat.
  • Once cooked, let any excess moisture evaporate, leaving you with a tasty dry dish.
  • Once your Kerala-style cabbage thoran is ready, serve it as a side dish alongside steaming hot rice.

  • Adjust the quantity of green chilies to suit your spice tolerance. For a milder version, deseed the chilies before chopping.

Kerala Style Cabbage Thoran – Variation #1

Ingredients

  1. 1/2 small cabbage, finely sliced
  2. 5 shallots, finely chopped
  3. A small piece of ginger, minced
  4. 2 green chillies, finely chopped
  5. 1/2 cup grated coconut
  6. 1 string of curry leaves
  7. 1 teaspoon mustard seeds
  8. 2 dry red chillies
  9. 2 pinches of turmeric powder
  10. 2 tablespoon oil

Preparing Coconut Mix

  1. Crush ginger, green chili, curry leaves, and shallots.
  2. Mix the above mixture with chopped cabbage and coconut. Thoroughly combine all the ingredients using your hands.
  3. Heat oil in a non-stick pan.
  4. Add mustard seeds and dried chili, allowing them to splutter.
  5. Add the cabbage mixture and stir well. Cook cabbage over medium-high heat.
  6. If you prefer a slight crunch of your cabbage thoran then you can cook without covering over medium-high heat.
    • If you like to cook cabbage tender then cover and cook the thoran until the cabbage is tender. Once cooked, remove the lid and let any excess moisture evaporate, leaving you with a beautiful dry dish.
  7. Once well-cooked, remove from heat.
  8. Serve alongside rice.

Cabbage Thoran – Variation #2

Ingredients

  1. 1/2 medium-sized cabbage, shredded or finely chopped
  2. 5-6 shallots or 1/4 cup regular onions (Savola), chopped
  3. 1/2 cup grated coconut
  4. 2-3 cloves of garlic, finely chopped
  5. 1/4 teaspoon cumin
  6. 3-4 green chillies, slit lengthwise
  7. A pinch of turmeric powder
  8. 1/2 teaspoon mustard seeds
  9. A sprig of curry leaves
  10. Salt, to taste
  11. 2 tablespoons oil

Preparing Coconut Mix

  1. In a blender or using your hands, combine the grated coconut, turmeric powder, finely chopped shallots, cumin seeds, and garlic. Pulse just once to create a coarse mixture. This blend will infuse your thoran with delightful aromas.

Sautéeing Mustard Seeds

  1. Heat oil in a pan over medium heat.
