Ingredients
  

For Marination

  • 2 Beetroots finely chopped
  • 1 onion finely chopped
  • 2 green chilies
  • 1/4 cup coconut
  • 1/4 tsp turmeric powder
  • 1/2 tsp salt

For Seasoning

  • 2 Tablespoon Oil
  • 3 shallots sliced
  • 1 dry red chili
  • 1 sprig of curry leaves
  • 1/2 tsp mustard seed

Instructions
 

Marinate Beetroot

  • Wash beetroot very well and chop it very finely. If you have a chopper or food processor it will be quick.
  • Add all ingredients for Beetroot Marination into a bowl and use your hand to mix all together until fully combined. Keep it aside for about 10 minutes.

For Seasoning

  • Heat oil in a pan and add the mustard seeds. When it starts to splutter add sliced shallots, dry red chilies, and curry leaves.
  • Sautee this until the onion is light golden brown, then add marinated beetroot mixture and stir all together.
  • Sprinkle 2 tbsp water and cover with a lid. Cook on low heat, covered, for 5 minutes. After 5 minutes remove the cover and stir fry for another 4-5 minutes or until all water evaporates and thoran is dry.
  • Serve as a side dish for rice or chapati.

Notes

For this recipe chopping the beetroot is better than grating. It tastes better if you chop it.
