Carrot and Zucchini Thoran is a tasty south Indian vegetable stir fry (also known as Thoran or mezhukkupuratti or poriyal or sabzi) .

The same base recipe can be used for a variety of types of vegetables bringing out the flavors of each.

It is a very simple vegetarian recipe and if you follow minor tips it can enhance the taste of Zucchini/Carrot south indian stir fry.

It is important to pick tender and fresh zuccini and carrots for this type of stir fry or Thoran recipe.

Another thing is about cutting/slicing the Zuccini and Carrot, try to slice them evenly and thin. It helps to cook in minimum time with even texture.

Instructions

Heat oil in medium sauce pan on med high heat. Once the mustard seed begin popping the oil has reached the correct temperature. Add halved dried red chili

When the mustard seeds pop, add onion, garlic, green chili and curry leaves

Stir the onion till light golden brown and add Turmeric powder and chili powder. Reduce heat and stir until the onion is golden brown.

Note: decrease or increase chilli based on desired spiciness

Now add the carrot and salt, stir to mix and coat the vegetable with the spices. Cook for 3 minutes and then add zucchini.

After adding zucchini increase the heat (high) and stir frequently until all excess water is evaporated. Once well mixed create a well in the center of the pan for water to steam off.

Store in a glass or ceramic container as the spices will not stain them. Do not cover until completely cooled. Can keep in the fridge for up to 1 week. This can also be stored in the freezer quite well, we do it often

Serve with Rice, Chapati, Nan

Ingredients
  

  • 2 Zucchini (grated or chopped in to small pieces)
  • 3 Carrot (grated)
  • 1/4 tsp Mustard Seed
  • 1 Onion (Sliced thin) 1 medium
  • 3 Garlic (Sliced thin)
  • 2 Green Chilli (Serrano pepper)
  • 2 Whole dried chilli (halved in to pieces)
  • 1/4 tsp Kashmiri chilli powder
  • 1/2 tsp Turmeric Powder
  • 1 tsp Salt 1tsp
  • 2 tbsp Cooking Oil
  • few Curry leaves few

  • To prepare Zucchini And Carrot Thoran (Sabzi Recipe), wash Zucchini and Carrot thoroughly with water and chop all of them finely.
