Ingredients
For Marination
- 2 Beetroots finely chopped
- 1 onion finely chopped
- 2 green chilies
- 1/4 cup coconut
- 1/4 tsp turmeric powder
- 1/2 tsp salt
For Seasoning
- 2 Tablespoon Oil
- 3 shallots sliced
- 1 dry red chili
- 1 sprig of curry leaves
- 1/2 tsp mustard seed
Instructions
Marinate Beetroot
- Wash beetroot very well and chop it very finely. If you have a chopper or food processor it will be quick.
- Add all ingredients for Beetroot Marination into a bowl and use your hand to mix all together until fully combined. Keep it aside for about 10 minutes.
For Seasoning
- Heat oil in a pan and add the mustard seeds. When it starts to splutter add sliced shallots, dry red chilies, and curry leaves.
- Sautee this until the onion is light golden brown, then add marinated beetroot mixture and stir all together.
- Sprinkle 2 tbsp water and cover with a lid. Cook on low heat, covered, for 5 minutes. After 5 minutes remove the cover and stir fry for another 4-5 minutes or until all water evaporates and thoran is dry.
- Serve as a side dish for rice or chapati.
