Beetroot thorn is coconut based stir fry from Kerala cuisine. It is often served with Rice or chapati. Craving for a simple but delicious South Indian delicacy, then you should try Thoran, which is a classic delight. Thoran is an everyday dish in Kerala often made with pretty much any vegetable that is available.
Wash beetroot very well and chop it very finely. If you have a chopper or food processor it will be quick.
Add all ingredients for Beetroot Marination into a bowl and use your hand to mix all together until fully combined. Keep it aside for about 10 minutes.
For Seasoning
Heat oil in a pan and add the mustard seeds. When it starts to splutter add sliced shallots, dry red chilies, and curry leaves.
Sautee this until the onion is light golden brown, then add marinated beetroot mixture and stir all together.
Sprinkle 2 tbsp water and cover with a lid. Cook on low heat, covered, for 5 minutes. After 5 minutes remove the cover and stir fry for another 4-5 minutes or until all water evaporates and thoran is dry.
Serve as a side dish for rice or chapati.
Notes
For this recipe chopping the beetroot is better than grating. It tastes better if you chop it.
