How To Make Chicken Chapli Kabab in Air Fryer

Chicken chapli kabab is so easy to make and super delicious. This recipe is Peshawari style kabab that is made from minced meat, whole spices, ground spices, green chilies, onion, fresh coriander leaves, etc. 

You can cook the chicken chapli kabab in any way you want. You can either pan-fry or air fry the patties and they taste delicious. Traditionally chapli kabab is made in the pan but in this recipe, we are using the air fryer for a healthier option.

Chicken Chapli Kabab Ingredients

Meat: Chicken Thigh is much more flavourful and better for kabab than chicken breast. If you’re using chicken breast then add 1 tbsp ghee into the mixture. Wash the meat before mincing otherwise there will be too much moisture. Too much water will result in the pattie breaking down while cooking. 

Tomatoes: Before cutting tomatoes, remove the core and seeds to remove extra moisture. Add tomatoes at the end of mixing.

Onion: Squeeze out any extra water from chopped onion by hand or in cheesecloth.

Chili: Adjust the chili flakes, green chili based on your spice level

Spices: Garam Masala, Coriander seeds, cumin seeds, Pomegranate Seeds, carom seeds.

Corn flour: You can also use roasted gram flour.

How to Shape the patties for Chicken chapli kabab

Wet your hands with water or Grease with oil. Get a handful of the mixture to make a ball and then flatten it with your hands or on a plate. Smooth the edges.

How To Air Fry Chicken Chapli Kabab?

  • Set the air fryer temperature to 365 degrees and preheat for 5 minutes.
  • Spray some oil on the bottom of the air fryer basket
  • Put chapli kabab patties in a single layer in the Air Fryer basket. Cook according to the recipe below, about 5-7 minutes based on the thickness at 365 degrees
  • Turn and cook for another 5-7 minutes at 365 degrees
  • Increase the air fryer temperature to 380 degrees and cook for 2 minutes
  • Flip the patties and cook for another 2 minutes at 380 degrees
  • Make sure the patties are cooked very well and both sides are golden brown.
  • Be sure to review your air fryer’s recommendations and adjust the temperature accordingly.

How To Serve Chicken Chapli Kabab?

You can serve them hot with Naan, Parathas, Mint Chutney, Raita etc. It can also be used in sandwiches or hamburgers.

How to Make Peshawari Chicken Chapli Kabab

Chicken Chapli Kabab is a minced meat patty that is flavored with various spices, onion, green chilies, tomatoes. It is served hot with Naan, mint chutney.

Ingredients
  

Whole Spices

  • 1 tsp carom seeds
  • 1 Tbsp roasted Cumin Seeds, crushed
  • 1 tbsp roasted Coriander Seeds, crushed
  • 2 tbsp Pomegranate Seeds OR Powder
  • 2 tsp crushed red chili flakes Adjust to your spiciness. Add 1 tsp if you like less spicy.

Ground Spices

  • 1/2 Tsp Garam Masala Powder
  • 1/2 tbsp salt

For Kabab

  • 1 Kg Minced Chicken or other meat.
  • 2 Tbsp Garlic Ginger Paste
  • 1 Medium Tomatoes Chop in to small pieces
  • 2 Green Chillies Optional Finely chopped Adjust to your spiciness
  • 4 tbsp chopped green onions or 1 medium onion
  • 1/2 cup Fresh Coriander Finely chopped
  • 1/2 cup corn flour
  • 1 egg
  • Oil For Fry

Instructions
 

  • Chop tomatoes, green onion, fresh coriander leaves, green chillies and set aside.
  • Roast Whole spices, coriander seeds, cumin seeds and crush them, and set them aside
  • In a bowl add chicken minced, green onion, green chili, ginger-garlic paste, fresh coriander leaves, crushed dried pomegranate seeds, crushed roasted coriander seeds, red chili flakes, crushed roasted cumin seeds, salt, garam masala powder, carom seeds, and mix until well combined. If you have time, cover and rest this mix for 30 minutes in the fridge.
  • Add egg, chopped tomatoes, and cornflour and mix well.
  • Dip hands in water. Take a handful of the mixture, and make kabab patties.
  • To Air Fry : spray Air Fryer basket with a bit of oil. Layer the patties on the basket, cook for 6-7 minutes at 365 F. After 7 minutes flip the patties and cook for 6-7 minutes at 365 degrees. Then increase the temperature to 380 degrees and cook for 2 minutes per side. Make sure the patties are cooked well and both sides are golden brown. Be sure to review your air fryer's recommendations.
  • To Pan Fry: Heat a pan and add 1/2 cup of oil for shallow fry. When oil is hot add kabab patties, cook over medium heat for 4-6 minutes or until the side is brown. When one side is golden brown, turn over and cook other side.
  • Serve hot with Naan, mint chutney.

Notes

You can use cornflour or gram flour/roasted chickpea flour
Be cautious about cooking time, if you overcook the kabab will be dry and hard.
You can use kababs sandwiches or desi style burgers. Serve them with parathas and raita (yogurt dip)

Tips for Perfect Chicken Chapli Kabab

  • Chicken Thigh is much more flavourful and better for kabab than chicken breast. If you’re using chicken breast then add 1 tbsp ghee into the mixture.
  • Different air fryers have different temperature settings so check the food early to make sure they don’t overcook
  • Use a digital meat thermometer to check the doneness of patties, it should be 160 degrees
  • The chapli kabab can be frozen with parchment paper between each patty. You can keep them for about a month in the freezer.
