This Chia Seed Pudding with 3 ingredients made of chia seeds, almond milk, and a sweetener of your choice. These tiny seeds are packed with nutrients; they contain antioxidants, omega-3 fatty acids, protein, and calcium.

Chia seeds come in both black and white varieties, and both have the same flavor and nutritional benefits. Their texture is similar to that of a little poppy seed. They are the perfect base for pudding because of their great ability to swell and absorb water.

Unsweetened almond milk has the fewest calories and sugar, so it’s the best choice for a low-calorie, simple, and low-sugar chia pudding. If you want to thicken the chia pudding and make it a really filling breakfast, snack, or dessert, use full-fat canned coconut milk. It’s also a good choice if you’re on a low-carb or keto diet.
  • Sweeteners: Maple syrup, Honey, monk fruit, stevia, Agave syrup, etc.

If you prefer to sweeten it only with toppings like fresh fruit, dried fruit, or chocolate chips, you can leave out the sweetener.

What is the ratio of Chia Seeds to Milk?

The ratio is important. The chia pudding ratio has been suggested in a variety of ways. The measurement can be adjusted to your preference for consistency. After making this many times, I think the following ratio works best:

For Thicker Chia Pudding:

2 Tablespoons of chia seeds for every 1/2 cup of milk or 4 Tablespoons for every 1 cup of milk.

For Softer lighter Chia Pudding:

1 1/2 Tablespoons of chia seeds for every 1/2 cup of milk or 3 Tablespoons of chia seeds for every 1 cup of milk.

How To Make Chia Seed Pudding (4 Steps)

Chia pudding is so simple to make! One important tip is that as the chia seeds swell you need to mix them again before putting them in the fridge for the final set.

  1. In a bowl or mason jar, whisk the chia seeds and milk together first. To 1 cup of liquid, I typically add 3 Tablespoons of chia seeds. If you like really thick chia seed pudding then you can add 4 Tablespoons of chia seeds to 1 cup of liquid.
  2. Once the chia pudding mixture is combined very well, then keep it aside for about 5-10 minutes.
  3. After 5-10 minutes, stir or shake again to break up any chia seeds clumps before putting in the fridge. If you skip this step, the chia seeds will occasionally clump at the bottom, leaving you with a lot of liquid on top instead of a well-combined, creamy pudding.
  4. Cover the container and place the mixture in the fridge for 2-3 hours or overnight. Once the chia seed pudding is set-top with fruits of your choice like blueberry, strawberry, peach, mango etc.

How To Flavour Chia Seed Pudding

Fruit is another great way to switch up the flavors of your chia pudding while also adding sweetness and nutrients. I like mangos, berries, bananas, apples, peaches, pears, etc.

  • You can never go wrong with chocolate, you can also try cacao powder into your chia – it’ll taste like dessert!
