This is an excellent method for getting your family to eat their vegetables. The curry is rich and creamy, delicately spiced, and uses common vegetables such as carrots, potatoes, green beans, and peas. You can also add cauliflower if you have one.
How To Make Vegetable Stew in a Pressure Cooker
Vegetable Stew cooked in Pressure Cooker
Ingredients
- 2 Tablespoons Coconut Oil വെളിച്ചെണ്ണ
Whole Spices:
- 1 inch Piece Cinnamon Stick കറുവപ്പട്ട
- 4 Nos Cardamom ഏലക്ക
- 4 Nos Clove ഗ്രാമ്പൂ
Vegetables:
- 2 Nos Potato ഉരുളക്കിഴങ്ങ്
- 2 Nos Carrot കാരറ്റ്
- 6 Nos beans
- 1/2 cup green peas
Other Ingredients:
- 1 No Onion (സവോള), large or 2 medium. Thinly sliced.
- 1 Inch Piece Ginger ഇഞ്ചി
- 2 Nos Green Chilli പച്ചമുളക്
- 3 Nos sprigs Curry Leaves കറിവേപ്പില
- 1/2 Tablespoon all-purpose flour
- 1 1/4 Teaspoon Salt ഉപ്പ്
- 2 cups Thin coconut milk, adjust based on the consistency of the gravy. കട്ടി കുറഞ്ഞ തേങ്ങാപ്പാൽ / രണ്ടാം പാൽ
- 1 cup Thick coconut milk കട്ടി കൂടിയ തേങ്ങാപ്പാൽ / ഒന്നാം പാൽ
- 1 Teaspoon Crushed Black Pepper ചതച്ച കുരുമുളക്
Instructions
- Wash and cut all vegetables.
- Place the pressure cooker on the stovetop and turn on the stove. Add coconut oil and once it is hot add cardamom, cloves, and cinnamon.
- Saute whole spices until it is aromatic, add ginger, green chilies, curry leaves, onion, and all other vegetables.
- Saute these in the oil for 3-4 minutes. Add salt and 1/2 Tablespoon of all-purpose flour. Saute the vegetable for another 2-3 minutes until the raw smell of the flour goes away.
- Add 1 Teaspoon of black pepper. Mix them all together. Add 3 cups of Coconut milk (first and second extract).
- Secure the pressure cooker lid, close the pressure valve and cook for 5 minutes in the pressure cooker. Turn off the heat. Wait for the pressure to release (10-15 minutes).
- Open the lid and check all vegetables are cooked well. Adjust salt and pepper to taste.
- Garnish with 1 tablespoon of coconut oil and 1 sprig of curry leaves. Mix all together
- Finally, serve the Kerala-style vegetable stew with chapati, idiyappam, or appam.
Notes
- To make Thin coconut milk add 1/2 cup canned coconut milk to 1 1/2 cup water.
