Easy Egg Fried Rice

How to make egg fried rice at home. This is an easy and addictive way to use up leftovers and only takes 30 minutes to prepare. You can use almost any vegetable you have in the fridge, and adding leftover cooked chicken, pork, beef, shrimp, or tofu is also a good idea.

When you make the egg fried rice the most important part is to have perfectly cooked rice. If we overcook the rice it tends to clump together. You will need 3-4 Cups of Cooked Basmati Rice for this recipe, and you can find the recipe to make the perfect rice here

When you make Chinese dishes it is often cooked on high flame and done very quickly. Spring onion gives a good flavor to fried rice. Adjust the salt at the end of the cooking because sometimes the soy sauce may already have salt. If you add too much salt when cooking vegetables then you may end up with too much salt for the fried rice.

Pro Tip: Prepare all the ingredients before start cooking and keep them aside. Since you are cooking on high heat the vegetables get cooked very fast.

Here is a great recipe to make restaurent style fried rice at home.

Ingredients
  

To Cook Rice

  • 3 cup Cooked Basmati Rice (1 cup raw rice cooked)

To Fry Egg

  • 2 eggs
  • 1 tbsp oil

Spices and Sauces

  • 1 tbsp chili garlic sauce or chili sauce
  • 1 tbsp soy sauce
  • 1 tsp sesame oil

Prepare the Ingredients

  • 2 tsp garlic (chopped finely)
  • 1/4 cup spring onion (white part), chopped
  • 1/4 cup spring onion (green portion)
  • 1/4 cup carrot (chopped small pieces)
  • 1/4 cup beans (chopped small pieces) or frozen peas
  • 1/4 cup cabbage
  • 2 tbsp Green Pepper (capsicum)

To Prepare the Vegetables

  • 3 tbsp oil (penut oil or any other neutral oil)

Instructions
 

Fry Eggs

  • Add 1 tbsp oil to a pan, when the oil is hot add 2 eggs, 1/2 tsp salt, 1/4 tsp crushed black pepper. Scramble the eggs. Transfer the scrambled eggs to a bowl and keep it aside

Prepare fried Rice

  • In a large skillet or wok, heat 1 tablespoon of the oil over high heat. When it begins to shimmer, add 2 tsp finely chopped garlic. Stir often and saute it lightly. Add 1/4 cup of spring onion (white part of spring onion), 1/4 cup beans (green peas), 1/4 cup carrot, 2 tbsp capsicum, 1/4 cup cabbage, stirring often, until softened. It will only take about 2-4 minutes since the heat is high. Note: We are not adding any salt yet to vegetables because the soy sauce may have enough salt. Adjust the salt at the end of the cooking.
  • Add scrambled egg and mix it very well for another minute. Note: If you want the mixed fried rice then add cooked chicken, cooked prawns or any other cooked meat at this time.
  • Reduce heat to medium and then add 1 tbsp soy sauce, 2 tsp chili garlic sauce or chili sauce, 1/2 tsp sugar, mix all together.
  • Add cooked rice, 1/2 tsp black pepper, 1/4 cup spring onion (green portion). Increase the heat to high again and mix it by folding the rice using a wooden spatular.This is to avoid breaking the rice too much. When the rice is mixed well and hot then turn off heat. Adjust the salt and spices to your taste. Just sprinkle the salt and mix it very well.
  • Serve the fried rice warm, goes well with chilli chicken.

Notes

  1. When you mix the rice try not to break the rice. You can either toss the rice or fold gently using a wooden spatula.
  2. Don’t overcrowd the skillet: Adjust the size of the skillet based on how much rice that you want to add. If you cook too much on a small pan it may get soggy. A good rule of thumb is that it should be only half of the skillet so you can mix it very well. If you fry too much at once, it will not fry properly.
  3. Variations, you can add meat or fish items.
    1. Meats: cooked chicken, beef, pork, duck, ham, bacon, Chinese sausage
    2. Seafood: cooked shrimp (diced or whole), crab, lobster
  4. Common Vegetables used in fried rice: celery, peppers, shoots, bean sprouts, peas, mushrooms, onions, water chestnuts
