Long Beans Mezhukkupuratti | Achinga Payar Stir Fry

Kerala Style Long Beans Mezhukuvaratti is a traditional dish from South India. It features long beans stir-fried with onions, coconut slices, green chilies, and curry leaves. The beans are seasoned with turmeric and Kashmiri chili powder, giving the dish a warm color and mild spice.

Ingredients
  

  • 1 bunch long beans around 20-25 beans
  • 1 medium onion thinly sliced
  • 1/4 cup coconut slices
  • 2 green chilies
  • 1/2 tsp ground turmeric
  • 1 tsp Kashmiri chili powder
  • 3 tbsp oil
  • 1 sprig of curry leaves
  • Salt to taste

Instructions
 

Prepare the Long Beans:

  • Rinse the Achinga Payar (long beans) thoroughly in water.
  • Remove the stem ends and cut the beans into 1-inch long pieces. Set aside.

Cook the Vegetables:

  • Heat oil in a pan over medium heat.
  • Add the sliced onion and sauté for 2-3 minutes.
  • Add the coconut slices and continue to sauté until the onions turn golden brown.
  • Add the green chilies and curry leaves, and mix well.

Add Spices:

  • Reduce the heat to low.
  • Add 1 tsp Kashmiri chili powder and 1/2 tsp turmeric powder.
  • Sauté for a minute until the raw smell of the spices is gone.

Cook the Beans:

  • Add the cut long beans and 1/4 cup of water.
  • Cover the pan with a lid and allow the beans to cook, stirring occasionally to prevent sticking.
  • When the beans are halfway done, remove the lid and continue to cook until the beans are fully cooked and tender.

Finish and Serve:

  • Add salt to taste and mix well.
  • Serve this long beans fry with steamed rice, Kerala Sambar, or Cabbage Thoran for an authentic and complete South Indian meal.
