Long Beans Mezhukkupuratti | Achinga Payar Stir Fry
Kerala Style Long Beans Mezhukuvaratti is a traditional dish from South India. It features long beans stir-fried with onions, coconut slices, green chilies, and curry leaves. The beans are seasoned with turmeric and Kashmiri chili powder, giving the dish a warm color and mild spice.

- 1 bunch long beans around 20-25 beans
- 1 medium onion thinly sliced
- 1/4 cup coconut slices
- 2 green chilies
- 1/2 tsp ground turmeric
- 1 tsp Kashmiri chili powder
- 3 tbsp oil
- 1 sprig of curry leaves
- Salt to taste
Cook the Vegetables:
Heat oil in a pan over medium heat.
Add the sliced onion and sauté for 2-3 minutes.
Add the coconut slices and continue to sauté until the onions turn golden brown.
Add the green chilies and curry leaves, and mix well.
Cook the Beans:
Add the cut long beans and 1/4 cup of water.
Cover the pan with a lid and allow the beans to cook, stirring occasionally to prevent sticking.
When the beans are halfway done, remove the lid and continue to cook until the beans are fully cooked and tender.
Finish and Serve:
Add salt to taste and mix well.
Serve this long beans fry with steamed rice, Kerala Sambar, or Cabbage Thoran for an authentic and complete South Indian meal.
