How To Make Perfect Steak

Ingredients
  

  • 2 Steaks your choice of cut, about 1–1.5 inches thick
  • Salt to taste
  • Black pepper to taste
  • 3 tablespoons oil like canola or vegetable oil
  • 3 tablespoons butter
  • 3 cloves garlic smashed
  • Fresh thyme or your favorite herbs

Instructions
 

  • Set the Steak Out
Remove steaks from the refrigerator and let them sit at room temperature for 5-10 minutes.

Preheat the Oven
Preheat your oven to 425°F.

  • Season the Steaks
Season generously on both sides with salt and black pepper.

Sear the Steaks

  • Heat a large, heavy-bottomed pan over medium-high heat for a few minutes.
  • Add oil to the pan. Once hot, carefully place steaks in the pan.
  • Sear steaks for 2–3 minutes on the first side without moving them.
  • Flip steaks onto a different hot spot in the pan and sear for another 2–3 minutes until a deep brown crust forms.

Add Butter and Garlic

  • Remove steaks and place them in a baking dish.
  • In the same hot pan, add butter and whole garlic.
  • Once butter is melted, stir in thyme (or other favorite herbs).
  • Return steaks to the pan briefly and spoon the butter mixture over the steaks to coat well.
  • Transfer steaks and all the butter mixture back to the baking dish.

Finish Cooking in the Oven

  • Bake steaks in the preheated oven (425) for 5–12 minutes, depending on thickness and desired doneness.
  • Use a digital meat thermometer to check for doneness:

    Remove from oven at:
    Rare – 115–125°F
    Medium Rare – 125–135°F
    Medium – 135–145°F
    Medium Well – 145–155°F
    Well Done – 155–165°F
    Final temp after resting:
    Rare – 120–130°F
    Medium Rare – 130–140°F
    Medium – 140–150°F
    Medium Well – 150–160°F
    Well Done – 160–170°F
