Preheat your oven to 335°F (170°C). Grease and flour a 9x5-inch loaf pan or line it with parchment paper.
In a large mixing bowl, cream together the butter, sugar, and molasses until smooth and fluffy.
Beat in the egg yolks, one at a time, until well incorporated.
Mix in the Vanilla, yogurt and mashed bananas until combined.
In another bowl, sift together the flour, baking soda, baking powder, and salt.
Gradually add the dry ingredients into the wet ingredients, stirring until just combined. Do not overmix.
In a clean, dry bowl with a whisk attachment, whip the egg whites until they form soft peaks.
Gently fold the whipped egg whites into the batter in three additions, being careful not to deflate the mixture.
Pour the batter into the prepared loaf pan and smooth the top with a spatula.
Bake in the preheated oven for about 60-70 minutes, or until a toothpick inserted into the center comes out clean.
Remove from the oven and let the banana bread cool in the pan for 10 minutes before transferring it to a wire rack to cool completely.
Once cooled, slice and serve. Enjoy your delicious homemade banana bread!
