Basic Omelet Recipe

Omelette is easy to make, flexible, and delicious. The best part of it is that you already have everything you need to make the omelet. This recipe makes a simple French omelet with three eggs, which serves one person for a filling breakfast or brunch.

Ingredients
  

  • 3 large eggs
  • 1 tablespoon unsalted butter
  • 1/4 tsp fine sea salt to taste
  • 1/2 tsp freshly ground black pepper to taste
  • 1 1/2 teaspoons minced fresh herbs such as chives, parsley, tarragon or a combination. optional

Instructions
 

  • In a medium mixing bowl, crack the eggs. 1 tablespoon water, salt, and pepper to taste
  • Whisk the egg whites into the yolks with a fork until they are well mixed. If you're using herbs, toss them in now.
  • Preheat a nonstick skillet (8 to 9 inches in diameter) over medium high heat. Melt the butter until it stops bubbling.
  • Reduce heat to medium and pour in the egg mixture. Whisk eggs around the skillet with a spatula or the back of a fork or a heatproof rubber spatula until the bottom begins to set. This only takes a few seconds (30 secs). When the bottom is set and the top is slightly runny and silky reduce heat to low and keep it for another 40 seconds. You don't want to overcook eggs. If using, add any fillings.
  • Go around the edges, then put the spatula under one side. Tilt the skillet and flip the egg. If necessary, finish folding in half or thirds with a fork or spatula.
  • Flip the omelet onto the plate. Garnish with fresh chives.
