Authentic Kerala Beans Mezhukkupuratti: Beans Stir Fry [VIDEO]

Ingredients
  

  • 500 grams of fresh green beans chopped
  • 2 medium-sized onion thinly sliced
  • 3 tablespoons of cooking oil
  • 2 sprig of curry leaves
  • 2 green chili sliced
  • 1 teaspoon chili flakes
  • 1/4 tsp turmeric powder
  • 1 1/2 teaspoon salt
  • 1/4 cup water
  • 1/2 teaspoon black pepper powder

Instructions
 

Heating oil in a pan.

  • Heat oil in a pan over medium-high heat. Once the oil is warm, add sliced onions and chili flakes. Sauté for about 4-5 minutes until the onions starts to turn color and aromatic. It doesn't need to be golden brown.

Adding spices and vegetables.

  • Now, reduce the heat to low and add turmeric powder. Stir for about 30 seconds to release its earthy flavor. Then, add the chopped beans, green chili, fresh curry leaves, and 1 teaspoon of salt. Mix everything well to coat the beans with the flavors.

Adding water and covering the pan.

  • Next, pour in 1/4 cup water. Cover the pan with a lid and let it cook on low heat for 4-5 minutes. This helps the beans to absorb all the flavors while staying tender. Make sure to stir in between.

Uncovering and final seasoning.

  • Now, remove the lid and add black pepper powder for that extra zing. Stir well and continue cooking uncovered for another 4-5 minutes, sautéing occasionally to ensure even cooking.

Final toss and serving.

  • Look at that vibrant color and glistening texture! Your Beans Mezhukkupuratti is now ready to serve. Pair it with rice and dal, or enjoy it as a side dish for a traditional Kerala meal.
